Refrigeration designed exclusively for the high volume pizza preparation industry. Cold evaporator air is immediately directed across and under the pans assuring the coldest temperature possible in ingredient pans. Refrigerated air then travels through air baffles to drift into the storage area to preserve stored foods and maintain high humidity.
